I prefer to eat fresh, organic foods. However, I’m also a busy mom and I’m surely not perfect. Don’t look so shocked.

Once in a while, the only way I will get lunch is by popping a frozen meal into the microwave. And when you’re shaking from hunger because your breast feeding baby is sucking away all the calories and you’re supposed to be out of the house in 15 minutes with baby in tow, a frozen meal is better than no meal.

Luckily, Trader Joe’s stocks some amazingly low-priced, preservative-free and tasty frozen entrees.  

You may know from this post and this post that I love Trader Joe’s. I should probably devote one day per week just talking about the great foods I find at Trader Joe’s. But it’s hard enough keeping up with Tuesday food day. You could say that I don’t like to follow rules on my own blog. I like to write about whatever moves me on that particular day. And surprisingly, it’s not always food. 
Anyways. I love Trader Joe’s. And you may know from yesterday that I love Thai food. 
So, Trader Joe just gave me one more reason to love him by introducing a Vegetable Panang Curry frozen entree. It truly tastes like something I would eat in Thailand. Probably because it’s a product of Thailand. Goodness, I do love Thailand. And Trader Joe for importing from Thailand. I swear, this meal doesn’t even taste like it was frozen five minutes ago. 
The Vegetable Panang Curry contains Thai jasmine rice, brown jasmine rice, panang sauce (coconut milk, Thai chili shallots, garlic, basil, galangal, kaffir lime leaf, palm sugar, lemongrass, coriander, soy oil, sea salt), and a vegetable blend (zucchini, onion, asparagus, kale, green beans, snow peas, baby corn, spinach). That’s all. It’s vegan and gluten-free. And did I mention spicy and delicious? 
I do have one complaint. I’d like the vegetable blend to be the first ingredient listed, rather than the last. I like LOTS of veggies. More vegetables than rice, please. Oh, and I don’t know why brown rice is listed on the ingredients when the rice is clearly white. If there is any brown rice hiding in there, I missed it. It would be perfect with more veggies and brown rice. I guess that’s two complaints. But it’s still pretty damn good. I can’t remember the exact price, but I want to say $2.49. A filling, semi-healthy meal for less than the cost of a Starbucks latte.

    I just tried this a couple of days ago. For me, it's a good meal starter. I can add some chicken or fish to it, and it's a complete meal for me. I hope they keep this around (my one complaint about TJs is that they keep discontinuing my favorite stuff!).
